Pumpkin Bread

“The spices in this Pumkin Bread recipe make it taste like pumpkin pie in a loaf. Thanks to Becky for this real easy recipe. The recipe makes enough for 3 loaves, one for eating and two for the freezer.”

INGREDIENTS
  • 1 cup oil
  • 4 eggs
  • 1 19 ounce can pumpkin
  • 2/3 cup water
  • 3 cups white sugar
  • 3 1/2 cups flour
  • 1/2 teaspoon baking powder
  • 2 teaspoons baking soda
  • 1 teaspoon salt
  • 1 teaspoon cinnamon
  • 1 teaspoon cloves
  • 1 teaspoon allspice
  • Optional: Add 1 cup raisins
DIRECTIONS
  1. Preheat oven to 325F. Grease 3 loaf pans.
  2. Mix together oil, eggs, pumpkin and water.
  3. In a separate bowl, mix together sugar, flour, baking powder, baking soda, salt and spices. Mix dry ingredients into wet until just combined.
  4. Pour into 3 loaf pans.
  5. Bake 1 hour or more (test with toothpick).

Yield: 3 loaves
