Aviation Cocktail

I think the first true cocktail I ever really liked was an Aviation. I’m not counting the Vodka Collins I drank proficiently (prolifically?) in university, which was mostly spiked lemonade.

Our version is made with Empress Indigo Gin, a popular choice for giving the Aviation its beautiful purple colour.

INGREDIENTS

  • 2 oz indigo gin
  • ½ oz fresh lemon juice
  • ½ oz maraschino liqueur
  • ¼ oz crème de violette

METHOD

Shake with ice until well chilled. Strain into a chilled Nick & Nora or coupe.

Garnish with a maraschino cherry (preferably Luxardo)

NOTE

The Aviation is a fairly tart, spirit-forward cocktail, even though our version uses a little less lemon juice than some traditional recipes. If you prefer a softer, slightly sweeter cocktail, try reducing the lemon juice. If you like a more pronounced sour flavour, increase the lemon juice slightly.
