Lavender Bee’s Knees

When I decided to host a 1930’s inspired cocktail party, one of the drinks I wanted to include was a Bee’s Knees. Then we visited Spirit of Niagara Distillery in Niagara-on-the-Lake and loved the Lavender Bee’s Knees on their cocktail menu.

While there, we picked up a bottle of KVAS Lavender Jasmine Syrup, also made in Ontario, and our own version of the Lavender Bee’s Knees was born. Continuing with the local Ontario distillers theme, our gin of choice for this cocktail is Dillon’s Dry Gin 7.

INGREDIENTS

  • 2 oz gin
  • ¾ oz fresh lemon juice
  • ½ oz lavender jasmine syrup
  • ¼ oz honey syrup

METHOD

Shake with ice until well chilled. Strain into a chilled Nick & Nora or coupe.

Garnish note: We generally don’t bother with a garnish when using a Nick & Nora glass, but if I were to add one, I’d use a small sprig of fresh lavender. At the distillery, they used dried lavender flowers, which looked lovely but were rather difficult to drink around!
