Rich and Tangy Rhubarb Sauce

Do you like your’s hot or cold? Sweet or tart? Whatever the choice, there is nothing better than fresh made rhubarb sauce. Here is our recipe, made with brown sugar in place of some of the white sugar for a slightly richer flavour.

Ingredients

  • 8 -10 cups chopped rhubarb (1 inch in size, more or less depending on how tart you want your sauce)
  • 1/2 granulated sugar
  • 3/4 cup brown sugar
  • 1/3 cup water (I omit if we have had a lot of rain)

Instructions

  1. In medium saucepan, combine all ingredients together.
  2. Bring to boil then reduce head and simmer, stirring occasionally, until rhubarb is soft, about 15-25 minutes, depending on how thick you want it.
  3. Refrigerate. Serve warm or cold with ice cream.
