A Great Year For Potatoes

We harvested our first potatoes ever today easily finding a few new potatoes ranging from the size of a golf ball to the size of a tennis ball. It has certainly been a great year to grow potatoes. Despite mounding the potatoes three times in the beginning of the season the plants are a still huge.

Next year we may experiment with different ways to mound the potatoes, mounding some higher to see just how many we can harvest.

We also picked a few Rainbow Carrots and had a great side dish for dinner of Roasted Potatoes and Carrots with Onions.

Roasted New Potatoes and Carrots

10-12 new potatoes (we used Yukon Gold this time) cut into 1/2 inch squares
8-10 diced young carrots (we used white, yellow and orange Rainbow Carrots)
2 small onions, diced (should have picked some from the garden but I forgot!)

Mix with butter, salt and pepper. Place in a flattened out pile in tinfoil. Roast in the BBQ for about 30 minutes, turning often so as not to burn.

Enjoy. Now we have to research how to store potatoes as it appears we will have plenty for the winter.
