7 Day Coleslaw Salad

“You can use white or red cabbage in this recipe but the red cabbage looks beautiful on the table.  This salad lasts for more than 7 days.  We have enjoyed it in the fridge for up to 14 days.  The longer it sits, the better.”

INGREDIENTS
  • 1 head cabbage
  • 1 large onion
  • 3/4 cup white vinegar
  • 1/2 cup vegetable oil
  • 1/3 cup white sugar
  • 2 teaspoon celery seed
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 teaspoon dry mustard
DIRECTIONS
  1. Shred cabbage and slice onion. Combine.
  2. Put remaining ingredients in microwave proof bowl or in saucepan. Bring to a boil, then cool slightly.
  3. Pour over shredded cabbage and onion and stir.
  4. Refrigerate for 7 to 14 days.
