Greek Salad Dressing 2

“The lemon juice in this recipe makes for a very traditionally ‘greek’ flavour. While my original Greek Salad Dressing is still good, we like this one better.”

  • ½ cup olive oil
  • ¼ cup lemon juice
  • 1 tsp. salt
  • ½ tsp. oregano leaves or basil leaves
  • 1 clove garlic, finely chopped
  • red peppers, coarsely diced
  • cucumber, coarsely diced
  • red onion, coarsely diced
  • tomatoes, quartered
  • romaine lettuce, chopped
  • kalamata olives
  • feta cheese
  1. Mix all dressing ingredients and let stand for at least 2 hours.
  2. Pour over vegetables, add crumbled feta and serve.

Yield: 4-6 servings
