Greek Salad Dressing

“Make this more of less garlicky to your taste.”

INGREDIENTS
  • 1/2 cup olive oil
  • 1/4 cup white vinegar
  • 1 clove garlic, crushed
  • 1 teaspoon sugar
  • 1 teaspoon fresh chopped oregano
  • red peppers, coarsely diced
  • cucumber, coarsely diced
  • red onion, coarsely diced
  • tomatoes, quartered
  • kalamata olives
  • feta cheese
DIRECTIONS
  1. Mix all dressing ingredients and let stand for at least 2 hours.
  2. Pour over vegetables, add crumbled feta and serve. You can also add some romaine however I prefer my greek salad without lettuce.

Yield: 4-6 servings
