“A terrific summertime salad with tomatoes and basil fresh from the garden. If you are entertaining, try Bocconcini, Cherry Tomato and Basil Skewers for a similar taste in an easy to eat version.”
- tomatoes, sliced thick
- bocconcini cheese, sliced thick
- olive oil
- balsamic vinegar
- Arrange tomatoes and cheese in overlapping slices on a serving dish.
- Roll basil leaves, slice into slivers. Sprinkle on tomatoes. Or arrange whole basil slices alternating with tomatoes and cheese.
- Drizzle with olive oil and balsamic vinegar. Sprinkle with a little salt.
In the winter, when fresh basil is hard to find, I use homemade pesto from the freezer. Arrange tomatoes as above. Thaw pesto, add extra olive oil and drizzle over tomatoes. Add salt to taste.
