Savoury Crumb Topping

“A handy savoury mixture for on top of mushrooms or vegetables. ”

  • 1 cup olive oil
  • 8 cloves garlic
  • 1/2 teaspoon pepper
  • 1/2 cup chopped parsley
  • 4 cups bread crumbs
  • 1/2 cup parmesan cheese
  • 4 teaspoons oregano
  1. Put one-half cup olive oil and garlic in food processor. Blend until smooth.
  2. Add pepper, parsley, bread crumbs and cheese and mix with spoon and blend well.
  3. Add remaining olive, one tablespoon at a time until mixture adheres nicely.

Stuffed Mushrooms: choose large mushrooms, remove stems. Stuff fairly full and bake at 350F until browned on top.

Vegetable Topping: Add to freshly cooked vegetables, broil until browned.

Yield: 5 1/2 cups
