Gluten Free Banana Oatmeal Cookies

Simple ingredients, no flour, no eggs, no sugar.  Tasted like a banana muffin in cookie form.  If you like coconut, try the Banana Coconut Cookies.

You can mash the bananas with a fork and mix this entirely by hand. I used my mixer just to make things faster and easier.

Ingredients:

  • 2 ripe bananas, mashed
  • 1 2/3 cups quick oats 
  • 1/3 cup chocolate chips (milk chocolate or semi-sweet)
  • 1 t vanilla
  • pinch salt

Instructions:

  1. Preheat oven to 350F
  2. Line cookie sheet with parchment paper
  3. Mash bananas.
  4. Add oats, vanilla and salt. You will have quite a wet batter.
  5. Stir in chocolate chips.
  6. Drop teaspoon size ball onto parchment paper. Flatten tops.
  7. Bake 12 to 15 minutes.
