“The lemon juice in this recipe makes for a very traditionally ‘greek’ flavour. While my original Greek Salad Dressing is still good, we like this one better.”
INGREDIENTS
- ½ cup olive oil
- ¼ cup lemon juice
- 1 tsp. salt
- ½ tsp. oregano leaves or basil leaves
- 1 clove garlic, finely chopped
- red peppers, coarsely diced
- cucumber, coarsely diced
- red onion, coarsely diced
- tomatoes, quartered
- romaine lettuce, chopped
- kalamata olives
- feta cheese
DIRECTIONS
- Mix all dressing ingredients and let stand for at least 2 hours.
- Pour over vegetables, add crumbled feta and serve.
Yield: 4-6 servings
