Tomato and Bocconcini Salad

“A terrific summertime salad with tomatoes and basil fresh from the garden. If you are entertaining, try Bocconcini, Cherry Tomato and Basil Skewers for a similar taste in an easy to eat version.”

INGREDIENTS
  • tomatoes, sliced thick
  • bocconcini cheese, sliced thick
  • basil
  • olive oil
  • balsamic vinegar
  • salt
DIRECTIONS
  1. Arrange tomatoes and cheese in overlapping slices on a serving dish.
  2. Roll basil leaves, slice into slivers. Sprinkle on tomatoes. Or arrange whole basil slices alternating with tomatoes and cheese.
  3. Drizzle with olive oil and balsamic vinegar. Sprinkle with a little salt.

In the winter, when fresh basil is hard to find, I use homemade pesto from the freezer. Arrange tomatoes as above. Thaw pesto, add extra olive oil and drizzle over tomatoes. Add salt to taste.
