INGREDIENTS
- 1 cup oil
- 4 eggs
- 1 19 ounce can pumpkin
- 2/3 cup water
- 3 cups white sugar
- 3 1/2 cups flour
- 1/2 teaspoon baking powder
- 2 teaspoons baking soda
- 1 teaspoon salt
- 1 teaspoon cinnamon
- 1 teaspoon cloves
- 1 teaspoon allspice
- Optional: Add 1 cup raisins
DIRECTIONS
- Preheat oven to 325F. Grease 3 loaf pans.
- Mix together oil, eggs, pumpkin and water.
- In a separate bowl, mix together sugar, flour, baking powder, baking soda, salt and spices. Mix dry ingredients into wet until just combined.
- Pour into 3 loaf pans.
- Bake 1 hour or more (test with toothpick).
Yield: 3 loaves
