Harvested Winter Kale And Spinach

While I’m not sure what is happening to winter here in Ontario as we still have no snow on the ground, we have had some cold nights over the past few weeks with several nights down below -15C. But today was a lovely sunny day, enough to entice me out to the vegetable garden to check on our winter crops kept under cover. What a thrill it was to find the spinach and kale still looking as happy as ever. So tonight we enjoyed Kale With Bacon & Onions with our supper. In fact, all of the vegetables in our meal this evening were from our own garden including stored carrots, parsnips, potatoes, onions and garlic. So while we still have a lot to learn about extending the harvest into winter, I’m pleased to say our first year is going pretty good.
