INGREDIENTS
- 2 teaspoons vegetable oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 tomatoes, chopped
- 1 zucchini, finely chopped
- 1/2 teaspoon paprika
- 1/2 teaspoon chili powder
- 1/2 teaspoon salt
- 1/4 teaspoon dried oregano
- 1/4 teaspoon ground cumin
- 1/4 teaspoon pepper
- 1 red pepper, chopped
- 3 cups corn off cob
- 1 tablespoon lime juice
DIRECTIONS
- Chop vegetables, set aside.
- In pan, heat oil over medium heat; cook onion and garlic, stirring to release flavours, about 1 minute.
- Add tomatoes, paprika, chili powder, salt, oregano, cumin and pepper; cook stirring occasionally, for about 8 minutes until most of the liquid has evaporated.
- Add red pepper, zucchini. corn and lime juice, cook stirring for about 5 minutes or until vegetables are tender.
Yield: 5 to 6 servings
