Simple ingredients, no flour, no eggs, no sugar. Tasted like a banana muffin in cookie form. If you like coconut, try the Banana Coconut Cookies.
You can mash the bananas with a fork and mix this entirely by hand. I used my mixer just to make things faster and easier.
Ingredients:
- 2 ripe bananas, mashed
- 1 2/3 cups quick oats
- 1/3 cup chocolate chips (milk chocolate or semi-sweet)
- 1 t vanilla
- pinch salt
Instructions:
- Preheat oven to 350F
- Line cookie sheet with parchment paper
- Mash bananas.
- Add oats, vanilla and salt. You will have quite a wet batter.
- Stir in chocolate chips.
- Drop teaspoon size ball onto parchment paper. Flatten tops.
- Bake 12 to 15 minutes.
