“Make this more of less garlicky to your taste.”
INGREDIENTS
- 1/2 cup olive oil
- 1/4 cup white vinegar
- 1 clove garlic, crushed
- 1 teaspoon sugar
- 1 teaspoon fresh chopped oregano
- red peppers, coarsely diced
- cucumber, coarsely diced
- red onion, coarsely diced
- tomatoes, quartered
- kalamata olives
- feta cheese
DIRECTIONS
- Mix all dressing ingredients and let stand for at least 2 hours.
- Pour over vegetables, add crumbled feta and serve. You can also add some romaine however I prefer my greek salad without lettuce.
Yield: 4-6 servings
