Chocolate Roasted Salted Macadamia Nut Cookies

Costco sells dry roasted sea salt macadamia nuts that are divine. They taste fantastic in these chocolate macadamia nut cookies. I also don’t like white chocolate so I used milk chocolate chips instead.

INGREDIENTS

  • 2 cups flour
  • 2/3 cup cocoa powder
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 cup butter, softened (two sticks)
  • 1 cup brown sugar packed
  • 1/2 cup white sugar
  • 2 eggs
  • 2 teaspoons vanilla
  • 1 1/2 cups milk chocolate chips
  • 1 cup macadamia nuts, chopped roughly

INSTRUCTIONS

  1. Preheat oven to 350F
  2. In medium bowl, mix flour, cocoa powder, salt, baking soda and baking powder and set aside.
  3. In mixer, cream butter with brown and white sugar until fluffy – 5-7 minutes
  4. Add 1 egg at a time, mixing between.
  5. Add vanilla, mix
  6. Turn to low, add flour mixture a heaping tablespoon at a time.
  7. Rough mix in chocolate chips and nuts. Turn of mixer and finish mixing with a wooden spoon (unless you have a bigger strong mixer)
  8. Put in freezer for 30 minutes (or refrigerator for a couple hours)
  9. Spoon onto parchment lined baking sheets
  10. Bake 11-13 minutes – they will still appear soft in the middle.

Makes about 40 cookies
