Costco sells dry roasted sea salt macadamia nuts that are divine. They taste fantastic in these chocolate macadamia nut cookies. I also don’t like white chocolate so I used milk chocolate chips instead.
INGREDIENTS
- 2 cups flour
- 2/3 cup cocoa powder
- 1 teaspoon salt
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1 cup butter, softened (two sticks)
- 1 cup brown sugar packed
- 1/2 cup white sugar
- 2 eggs
- 2 teaspoons vanilla
- 1 1/2 cups milk chocolate chips
- 1 cup macadamia nuts, chopped roughly
INSTRUCTIONS
- Preheat oven to 350F
- In medium bowl, mix flour, cocoa powder, salt, baking soda and baking powder and set aside.
- In mixer, cream butter with brown and white sugar until fluffy – 5-7 minutes
- Add 1 egg at a time, mixing between.
- Add vanilla, mix
- Turn to low, add flour mixture a heaping tablespoon at a time.
- Rough mix in chocolate chips and nuts. Turn of mixer and finish mixing with a wooden spoon (unless you have a bigger strong mixer)
- Put in freezer for 30 minutes (or refrigerator for a couple hours)
- Spoon onto parchment lined baking sheets
- Bake 11-13 minutes – they will still appear soft in the middle.
Makes about 40 cookies
