For 2 pounds deboned chicken thighs (roughly 8)
In a medium bowl, mix
- 3 tbsp olive oil
- 2 tbsp fresh tarragon, chopped
- 1 tbsp whole grain mustard
- Zest of 1/2 lemon
- 1 tbsp lemon juice
- 1 garlic clove, minced
- 1 tsp kosher salt
- ½ tsp black pepper
Marinade chicken thighs 1-2 hours before cooking. Spread on sheet pan, roast at 425F for 20-30 minutes.
