What do you do with all that extra zucchini in the garden?
Our favourite way to eat zucchini is grilled on the BBQ with a bit of olive oil, salt and pepper. Next up are slices fried in garlic and olive oil until still crispy. I also cut up zucchini for use in rice and pasta dishes and on pizza (chopped or even sliced like pepperoni). Try some thin slices raw on sandwiches or in grilled sandwiches.
But when you have some oversized zucchini, a great option is a zucchini loaf. But even that can get a little boring, so why not mix it up a bit?
- Try regular zucchini loaf or zucchini muffins. This recipe has a crunchy streusel topping that even your youngest will enjoy, even if he knows there is zucchini in the muffin!
- Or maybe chocolate zucchini loaf – this tastes almost like a brownie.
- How about coconut zucchini loaf? It has a very unique flavour and texture that tastes very good when heated with butter.
- And lastly, experiment with a tropical vibe by going for pineapple zucchini loaf.
