“A handy savoury mixture for on top of mushrooms or vegetables. ”
- 1 cup olive oil
- 8 cloves garlic
- 1/2 teaspoon pepper
- 1/2 cup chopped parsley
- 4 cups bread crumbs
- 1/2 cup parmesan cheese
- 4 teaspoons oregano
- Put one-half cup olive oil and garlic in food processor. Blend until smooth.
- Add pepper, parsley, bread crumbs and cheese and mix with spoon and blend well.
- Add remaining olive, one tablespoon at a time until mixture adheres nicely.
Stuffed Mushrooms: choose large mushrooms, remove stems. Stuff fairly full and bake at 350F until browned on top.
Vegetable Topping: Add to freshly cooked vegetables, broil until browned.
Yield: 5 1/2 cups
