Corn Medley

“A great crowd pleaser for a BBQ. Great when peppers, zucchini and tomatoes are available in abundance in the garden. ”

INGREDIENTS
  • 2 teaspoons vegetable oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 tomatoes, chopped
  • 1 zucchini, finely chopped
  • 1/2 teaspoon paprika
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon dried oregano
  • 1/4 teaspoon ground cumin
  • 1/4 teaspoon pepper
  • 1 red pepper, chopped
  • 3 cups corn off cob
  • 1 tablespoon lime juice
DIRECTIONS
  1. Chop vegetables, set aside.
  2. In pan, heat oil over medium heat; cook onion and garlic, stirring to release flavours, about 1 minute.
  3. Add tomatoes, paprika, chili powder, salt, oregano, cumin and pepper; cook stirring occasionally, for about 8 minutes until most of the liquid has evaporated.
  4. Add red pepper, zucchini. corn and lime juice, cook stirring for about 5 minutes or until vegetables are tender.

Yield: 5 to 6 servings
